Food : BBQ Chicken Sliders

Y’all! I love when I take a chance and mix some stuff together and it turns out amazing! These sliders are definitely high on the scale of amazingness!

A few weeks ago, I posted on my personal Facebook that I was having a hard time deciding what to make for dinner. It was just one of those nights that absolutely nothing sounded good. One of my friends made a suggestion that included chicken, pineapple, bacon, and Kings Hawaiian rolls. That didn’t sound good that night, but it had sparked an idea……so the other night, I decided to give it a go! And y’all, talk about mouth watering yumminess!

So here it is….

 

BBQ Chicken Sliders

 

Ingredients

2 tbsp butter

splash of olive oil

3 boneless chicken breasts, shredded

6-8 slices turkey bacon, cooked, chopped

1 small onion, chopped

1/2 cup bbq sauce

1 package Kings Hawaiian rolls (I used the Honey Wheat ones)

1/2 cup fresh pineapple, chopped

1 package shredded cheddar cheese

1/4 tsp course ground peppercorn

pinch ground sea salt

 

Preparation:

I used chicken that I had previously prepared with my usual crockpot method and then froze. But you can just grab you some chicken breast, cook it up and shred it (or snag a rotisserie chicken if you’d like).

I also prepped my turkey bacon beforehand — by baking it! I’ve tried a few brands of turkey bacon over the years, and I find Oscar Meyer’s to be the best in taste and cooking ease. Preheat your oven to 400*, line a baking sheet with parchment paper (seriously….best stuff ever!). Lay out your bacon slices on the parchment paper. Bake for 10-14 min, depending on your desired crispness. Blot bacon with a paper towel and allow to cool so you can chop or tear into pieces. Once you’re done with your bacon, drop the temperature of your oven to 350*.

Chop your onions and set to the side until it’s time to use them.

Heat your nonstick skillet on low heat until the skillet is warm. Drop in your butter and let it melt, coating the bottom of the pan. Then add that splash of olive oil and stir it together. This is my new favorite method for the traditional “buttering the pan.”

Add shredded chicken and onions to the pan and heat through.

Once heated through, add your BBQ sauce and mix throughoughly and cook for an additional 2-3 minutes. Turn heat off and set to the side. My neighbors brought me back some BB King’s Memphis BBQ sauce back from a trip they made recently….the sauce is amazing! I highly recommend it if you can get your hands on it.

Line a 9×13″ baking pan with parchment paper. Cut your Kings Hawaiian rolls in half and place the bottom half in the pan. Coat with a layer of shredded cheddar.

Add the BBQ mix on top of the cheddar, spread the bacon pieces all around, add your pineapple pieces all over, and finally, load it up with the rest of the shredded cheddar.

Put the top of the rolls on top, give it a little push to squeeze the mix all down. Lightly brush some olive oil on top of the rolls, sprinkle the ground peppercorn and sea salt on top.

 

Put into the oven and bake for 10-14 minutes, until the cheese is melted.

Take them out of the oven and be prepared for them to be gone in a flash!
